If you've never tried pumpkin pie before and are a bit unsure of the flavour then I reckon this would be a great way to give it a go! These were soooo delicious - went super fast in our house and so I heard the one we dropped off at daycare did as well! Hope you enjoy this recipe and let me know what you think!
Ingredients and Method below

Pumpkin Pie Cupcakes
Ingredients:
1 1/2 cups flour
2 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon all spice
1/4 teaspoon ground cloves
pinch of salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup vegetable oil
1/3 cup vegetable oil *tip - you can substitute oil for sour cream or plain yogurt!
3/4 cup white sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
3/4 pumpkin puree *see pumpkin spice latte recipe for how to make this.
1/3 cup milk
Cream Cheese Frosting
2/3 cup butter softened
2/3 cup cream cheese
1 teaspoon vanilla extract
3 cups icing sugar (may need more for thickness)
*add milk one tablespoon at a time if consistency is too thick
Optional: Top with cinnamon or sprinkles! 🎃
Method:
Preheat oven to 180c degrees. Line muffin pan with cupcake cases
Add to a medium sized bowl and mix - flour, spices, baking powder, baking soda and salt
In a separate large bowl beat together eggs, sugar, oil and vanilla extract
Mix in pumpkin to large bowl
Slowly add flour mixture while mixing
Spoon batter into muffin cases to just over half way
Bake a 180c degrees for approx. 18 minutes or insert toothpick and comes out clean
Frosting::
Beat butter until smooth and soft and then beat in the cream cheese
Add the vanilla extract
Beat in icing sugar until thick. Adding additional icing sugar to thicken or milk if required.
Frost or pipe cupcakes once cool!
Sprinkle with festive decorations or cinnamon
